Fried Crawfish Po'Daddy's / Remoulade Sauce

Remoulade Sauce:
1 cup of mayo
1 tbls minced celery
1 tbls minced shallots
1/2 tsp minced garlic
2 tbls chopped green onion
3 tbls ketchup
3 tbls creole mustard
1 tsp lousianna hot sauce
salt/pepper to taste

1/2 lb of crawfish tails
1/2 cup of masa
1/2 cup of cornmeal
2 tbls of your favorite creole seasoning
oil for frying(peanut)
salt/pepper
2 loaves of french bread
1/2 cup of shredded lettuce
6 slices of tomato


Directions: In a mixing bowl, combine all of your ingredients for the remoulade sauce except salt/pepper, use it to taste. refrigerate,for craw fish,season with 1 tbls of creole seasoning, in a mixing bowl mix the masa and cornmeal together,season with the remaining creole seasoning. toss the craw fish in masa/cornmeal mixture and shake off excess,place directly into hot oil, cook until golden brown, about 3-4 minutes stirring constantly. drain on paper towel or a cookie rack will work, season with some extra creole seasoning if you like or cayenne pepper, to assemble your sandwhich, spread sauce on both sides of the bread, topp with shredded lettuce, tomato slices and crawfish, serve with chips or fries.

Chicago Style Italian Beef Sandwhices

- Rump Roast or Roast of your choice(top sirloin,top round)

- 1pkg of italian seasoning

- 1pkg au ju gravy mix

- 1 beef boullioun cube

- 1 table spoon black pepper

- 2 teaspoons garlic powder

- 1/2 teaspoon crushed red peppers

- 2to3 stalks of celery,(depends on you)

- 1sm jar of perreroccini peppers

- 1 lg green bell pepper


mix 2cups of water with all of your seasoning and gravy mix. pour mixture into crockpot or a deep baking dish,slice celery and bell pepper thin, place them in your dish, place roast on top, you may have to add a cup of water depending on the size of the roast and your dish, cover and cook on low for 5-6hrs in crockpot, for the oven cover with foil and cook it for 4hrs on 225 degrees. cool enough to pull apart, place meat back in your dish and cook for an additional hr. serve on a soft italian roll,top with auju and peppers. for a little extra wet sandwhich, dip the bread in auju.

Gyro Burgers and Tahini Sauce

If you like gyros this is the recipe for you. These taste incredible and they are so easy to make. You'll be foaming at the mouth by the time you finish preparing this delicious burger wrap. Please leave a comment if you like this recipe. Enjoy!


Ingredients


*** Look for tahini pasta on the imported food aisle of your super market. Large super markets like Wal-Mart, Publix, and Ingles will probably be your best bet. If you know of a Mediterranean market in your area they will definitely have it. ***

1 - Pound of Lean Ground Beef

1 - Teaspoon of Greek Seasoning

4 - Pita Bread Rounds

4 - Leaves of Lettuce

8 - Tomato Slices

4 - Red Onion Slices

1 - Bottle of Tahini Sauce

1/2 - Cup of Feta Cheese



Directions



First you need to combine the beef and seasoning. Then mold them into 4 individual patties. Place the patties on the grill, covered. Heat needs to be around 350 to 400 degrees. Cook on each side for a total of 6 minutes or until center of the burger is to your liking. Remove 2 inches of bread from 1 side of each of the pita rounds, this forms a pocket. Line each of the pita rounds with the rest of the ingredients on the list above (lettuce, tomato, red onion). Add the burger, then drizzle each with the desired amount of Tahini Sauce. Include a tablespoon of cheese if desired.

Layered Tater Salad

You can't have a BBQ without potato salad. This is another southern style recipe for my wifes special "Layered Tater Salad" its great. Enjoy and please comment if you like this recipe!


Ingredients


3 1/2 to 4 Pounds of Unpeeled Red Potatoes

1 - 8 oz Container of Sour Cream

2/3 Cup of Mayonnaise

2 - Tablespoons of Creole Mustard

1/2 Teaspoon of Salt

1/2 Teaspoon of Pepper

1 - Chopped Onion, Green

1 Cup of Parsley (Italian)

3 - Slices of Bacon (Cook then crumble)


Directions


First thing you need to do is bring your potatoes to a boil. Do this over medium/high heat for 25 minutes or until tender. Drain and allow the potatoes to cool. Next you stir the sour cream together with the (4) ingredients below it on the list above. Then you take the potatoes (about 1/3) and layer the bottom of the dish you use to make it. Spread the sour cream mixture, green onions, and parsley over the top of the layer of potatoes. Repeat this twice then, chill and cover for 1 hour. Sprinkle with bacon and parsley before serving. Enjoy!

Kick Ass Coleslaw

KFC's got nothing on this amazing coleslaw. Give this a try the next time you have a BBQ. I guarantee you coleslaw fans will beg for your recipe.


Ingredients

1 Head of Fine Cut/Diced Cabbage

1/2 Cup Diced Carrots

1 1/4 Tablespoon Lemon juice (real)

3/4 Tablespoons of White Vinegar

1/4 Tablespoon of Black Pepper

1/3 Cup of Milk

1/3 Cup of Mayonnaise

1/4 Cup of Granulated Sugar

2/3 Cup of Butter Milk

1/4 Tablespoon of Salt

1 1/3 Tablespoon of Minced Onions


Directions


First use a shredder to finely dice the cabbage and carrots. Pour the cabbage and carrot into a large bowl and stir in minced onions. Use a food processor to add the remaining ingredients together and add the mixture to the vegetables. Mix throughly and refrigerate in a covered bowl over night.

Delicious Garlic Bread

This is another easy to make recipe your family will love. It goes great with my husbands spaghetti recipe, look for it to post soon!


Ingredients

1 - Small stick of Garlic Butter, recipe below

1 - Loaf of Fresh Sourdough Bread

1 - Fresh Basil Leaves

2 - Tablespoons of grated Parmesan


Directions

Cut garlic butter into small squares. Melt and apply garlic butter to bread halves (bake until golden brown @ 350 degrees). Remove from the oven and drizzle with olive oil and Parmesan to desired taste.


Ingredients for Garlic Butter

2 - Garlic Heads

1 - Olive Oil

1 - Pound of Butter

1/2 Cup - Mayonnaise

1 Tablespoon - Salt

1 Tablespoon - Italian Seasoning

1/2 Tablespoon - Parsley Leaves

3/4 Tablespoon - Red Peppers (crushed)

2/3 Cup - Grated Parmesan

Slice off the tops of the garlic heads and place them in a piece of aluminum foil, drizzle them with olive oil, mix the remaining season with salt and pepper. Place the mixture in the oven for about 45 min to an hour.

Once this is done, place the roasted garlic into a mixing bowl. Add the remainder of the ingredients and mix evenly. Place in the refrigerator until use.

Kool Aid Pie

This is a quick and easy recipe your kids will love. It's easy to make and the flavor options are limited to your imagination.


1 - 8 oz. Can of Condensed Sweet Milk

1 - Package of Kool-Aid (any flavor)

1 - Container of Cool Whip

1 - Graham Cracker Pie Crust


Mix the ingredients, pour into crust, chill for 2 hours, and enjoy!
